What Is Tallow

PrairieSiren Tallow is a special fat taken from around the kidneys of the northern beef cow.  from the suet of an animal. Suet is the hard, nutrient-dense fat that surrounds the kidneys and loins. This fat is rendered (melted down), the impurities removed, and used as a high-quality base product for skincare, soap making & cooking.

other tallows consist of all the fats from the cow combined together. The other fats that are incoporated through the muscles and the rest of the cow are different than the suet.  My tallow is ONLY the Kidney fat. It is the prime fat.  It is the filet mignon of the fat world. This fat protects the organs of the cow in the winters here where it can get 40 below with outrageous Windchill's. This fat mass on these norther cows is what enables them to stay alive and thrive in these conditions. Ive found that the more northern the cow the bigger this fat deposit is on them. Southern cattle have little to no suet fat encasing their loins because they don't need it. This is natures gift to the cow and to you. 

 

Tallow in Nutrition and cooking

Considered a must-have in Paleo kitchens for a number of reasons. Mainly for its dense nutritional benefits, minerals, vitamins and its holistic natural absorbency to our bodies, unlike highly processed plant & seed  oils.  naturally contains conjugated linoleic acid – a dietary supplement that is commonly marketed as having a host of health benefits including cardiovascular and anti-cancer benefits. It also contains antioxidants, fat-soluble vitamins, and omega-3 fatty acids.

As with all meats we consume, you will want to choose the highest quality meat you can find. Always aim for grass-fed beef.  aside from the many nutritional benefits, Tallow is a dream for cooking, frying and baking. It has a high smoke point of 420℉.

  and  was used for frying in most restaurants up until the 1970’s when the vegetable oil industry started advocating for the use of vegetable oils instead. In the days when obesity and heart disease were virtuall non existent.  

What’s the benefit of a high smoke point? This means that the fat can be heated at high temperatures without oxidizing and creating free radicals. Tallow’s smoke point even exceeds that of coconut oil and lard. The less free radicals we consume in our diet, the better.
